Amylase Demo

One source of amylase is in the saliva. Try letting an unsalted cracker "melt" on your tongue. Do you taste a small burst of sugar?
Demo #2. Spit carefully into a small peti plate of solidified starch gel. After a minute or two to allow the reaction to occur, rinse and pour a small amount of potassium-iodide stain into the dish. There should be areas that are resistant to stain as they have been digested by the amylase.
Remember...another source of amylase is the pancreas, from which it travels via ducts to the small intestine, where is works on remaining starch.
